Our August Epicurean menu is a culinary exploration through all of the major regions of Spain! 

Spanish food is often recognized as one of the top cuisines in the world. We love it for its unbeatable combination of fresh ingredients and culinary traditions dating back hundreds of years. 

The food in Spain is as unique as it’s geography. From the countryside to the sprawling cities and coastal villages, Spanish food is about making the most of the best local produce. Each region and city boasts its own unique cuisine and flavors. 

However, no matter the region, Spaniards are proud of their Mediterranean diet and believe they have the healthiest foods in the world. A staple in any Spanish kitchen is an extra-virgin olive oil. It is widely used in almost every meal and not surprisingly, about 44% of all of the world’s olive oil is produced in Spain.

Recipe: Rape Envuelto en Jamón Serrano

Our Sous Chef, Kory Minor, shared this recipe on Sarasota's Suncoast View on August 15, 2019. Here's the complete recipe in case you missed the cooking segment, or simply join us at Michael's On East to enjoy this delicious Spanish dish available on the Restaurant’s Spain Epicurean Adventure menu.


Rape Envuelto en Jamón Serrano

Ingredients for Fish:
  • 6-7oz portions of Fresh Monkfish

  • 12 thin sliced of Serrano ham

  • Salt and pepper to taste

Steps for Fish:
  1. Season the fish and sear to medium-rare.

  2. Let cool, then wrapped with ham.

  3. Bake for 5 minutes in a standard oven at 500-degrees or 5 minutes in a convection oven at 350-degrees.

Ingredients for Clams:
  • 30 littleneck clams (rinse very well)

  • 2 jalapenos seeded and julienne

  • 8 garlic cloves roughly chopped

  • 2 cups of chardonnay 

  • 2 yellow tomatoes

  • 2 red tomatoes

  • 2 fresh limes

  • ½ cup of virgin olive oil

  • ¼ cup blended oil

  • Salt and pepper to taste 

 Steps for Clams:
  1.  Chop the tomatoes roughly and set aside.
  2. Heat up medium-sized sauté pan, then add the blended oil, garlic, clams, and tomatoes.
  3. Cook for 4 minutes then add the wine and cover the pan until the clams open. (about 3 minutes)
To Plate:

In a small bowl place, 5 clams with sauce then place the fish on top. You can serve the dish with vegetables, rice, roasted potatoes or sautéd spinach.

During the month of May, Michael’s on East is bringing the vibrant flavors from south of the border to Sarasota!

Mexican food has some of the most well-known and beloved dishes in the world. Traditional Mexican cuisine is much more than authentic dishes and spices; it’s a vibrant, lovingly preserved, cultural heritage.

The history of Mexican food began about 9,000 years ago and many of the foods we find in the Mexican pantry carry ancient pedigrees. Beans, tomatoes, corn, and chile peppers rank among the world's first cultivated foods and were staples of ancient Aztecs and Mayans. In addition to the staples, native ingredients include tomatoes, squashes, avocados, cocoa, and vanilla. Similar to most other countries, traditional Mexican food varies regionally but blends to create the flavors what we know and love.

APRIL 2019: Milan Epicurean Adventure

Milan might be best known as one of Europe's four fashion capitals but it is also famous for its opera, churches, da Vinci's Last Supper fresco, and of course its cuisine.

For Italians, food is for more than just nourishment, it’s an important part of life. Even though you will be able to find Italian specialties all over Italy, each of the 20 regions within Italy has their own spin on “Italian food.” The geographical location of the region influences the ingredients used, such as the choices of fat, cheese, and meat.

Milan is located within the Lombardy region in the north of Italy. Northern Italian cuisine is characterized by a lesser use of olive oil, pasta, and tomato sauce and a heavier reliance on butter, rice, corn, and cheeses for cream sauces. Instead of tomato, northern cooks employ wine or broth as the liquid and chopped herbs for flavor, resulting in elegant and rich flavors. Common ingredients used include local vegetables and fruit, beef, pork, and a variety of seafood.

Dessert Recipe: Balsamic & Port Pear Frangipane Tart

As prepared by Michael’s On East Pastry Chef Ray Lajoie and featured on the Restaurant’s Epicurean Adventure to Milan, available during lunch and dinner through April 2019. (Not available on holidays including Easter.)

For the Pastry
½ cup Sugar
1 cup Butter
1 ½ cup Flour

Preheat the oven to 350 degrees. Cream the butter and sugar. Add the flour and mix until just combined. Wrap in plastic and chill in the refrigerator for 1 hour. Roll the chilled dough slightly larger than the tart pan. Lightly press into the pan trim edges then place in the freezer for 30 minutes. Bake at 350 for 10 minutes. Remove from the oven and set aside to cool.

Poached Pears
Fresh Pears, peeled and cored 
1½ cup Port
1 cup Sugar
¼ cup Balsamic Vinegar

Place port, vinegar and sugar into a sauce pan. Bring to a boil, then add the pears and simmer until tender. (i.e. When a knife inserts easily into the pears.) Remove from heat and chill.

Frangipane
1 ¼ cup Butter (at room temperature)
1 ¼ cup Sugar
2 cups Almond Flour
2 Eggs 
¼ cup Flour

Preheat the oven to 350 degrees. Mix well, spread batter into the cooled tart shell. Drain the pears reserving liquid. Arrange on top of the frangipane and bake for about 30 minutes, until firm and golden brown. While warm, brush top with apricot jam and top with chopped pistachios.

Port Glaze
Reduce the reserved poaching liquid in sauce pan over medium-high heat until reduced by ¾. Chill and drizzle over tart before serving. Enjoy!

Tasting Notes: Pale yellow with notes of lemon, peach and tropical fruit aromas.

- Burgáns, a Celtic name, is the name of the slope where the winery is located, in the middle of Salnés Valley. From there, you can see amazing sightseeing's region and the Arousa Ría.  A custom cuvée made for European Cellars by Martin Codax.  Burgans is a cuvée made from a small selection of vineyard plots in the Salnes sub-zone of Rias-Baixas which have a characteristic pit-fruit quality and richness in addition to the bracing minerality for which the sub-zone is famous.

Malbec "Crios" Susana Balbo, Mendoza, AR, 2015 - Wine Advocate: 90
Tasting Notes: A beautiful, deep, vibrant rose color. Has a surprising amount of body for a rose wine, and beautiful aromas of fresh, ripe wild strawberries. On the palate, the flavors of strawberries and young cherries come rushing in, accompanied by some spice notes and a clean, dry finish.

The grapes for the 2015 Críos Malbec are sourced exclusively in the Valle de Uco, from Los Chacayes, Vista Flores, Los Árboles and Gualtallary Sur to be precise. This cold and wet vintage helped achieve the drinkability and freshness they aim for in this wine. It fermented in stainless steel and part of the wine matured in well-seasoned, neutral French oak barrels for nine months. There are some toasty notes and a core of perfectly ripe berries. The palate is fresh and balanced, quite tasty.”

- After 22 years of winemaking, Susana Balbo has a strong sense of what she wants from her wines. From every harvest, she creates the grandest possible wines under her Susana Balbo label. To achieve this, she makes a rigorous selection of the finest barrels prior to making her final blends, dividing them into the parents (reserve level wines) and offspring or "crios.

Offering monthly menus inspired by the world’s most exotic food and wine meccas, the Restaurant’s Epicurean Adventure this February will give you an opportunity to treat your sweetheart through the month! (Not valid on Valentine’s Day.)

The Michael’s On East three-course French Epicurean Adventure dinner menu is available Monday through Saturday evenings for $38.95 per person, February 1-28, 2018. The two-course lunch offering features a choice of entrée and dessert for $19.95 per person and is available Monday through Friday, 11:30 a.m. to 2 p.m. Epicurean Adventure menus are not available on holidays including Valentine’s Day, Wednesday, February 14.

Offering monthly menus inspired by the world’s most exotic food and wine meccas, the Restaurant’s Epicurean Adventure this January will present a culinary experience inspired by one of Italy's favorite famed regions: Tuscany.

South Africa Wine FlagThe Michael’s On East culinary team loves the challenge of creating brand-new Epicurean Adventure lunch and dinner menus each month. This season, we have decided to EXTEND our South African Epicurean Adventure through December!

Our culinary team will continue to present special recipes all the way from Londolozi Game Reserve in South Africa! The Klaubers have fallen in love with Londolozi and South African cuisine as part of the bi-annual Gulf Coast Connoisseur Club journeys they lead in conjunction with Admiral Travel International every other year. Now, Sarasota residents and visitors can enjoy an authentic taste of Africa from the comfort of their favorite table in the Restaurant at Michael's On East! 

Special thanks to Londolozi Game Reserve Executive Chef Anna Ridgewell for sharing her Cape Malay recipes with our own Executive Restaurant Chef Jamil Pineda and Pastry Chef Catherine Tighe.

New Orleans Epicurean Adventure: October 2017

From October 2–15, 2017, dozens of the best independent restaurants throughout Sarasota and Manatee County will be featuring specially priced breakfast, lunch and dinner prix fixe menu selections – inviting you to “Dine to the Nines!” A three-course dinner featuring original New Orleans fare will be available for $39 per person as well as a two-course lunch for $19 per person, in conjunction with the Sarasota-Manatee Originals' Eat Like a Local Restaurant Week, October 2-15.
 
The featured New Orleans-themed menus will continue featured as Michael's Epicurean Adventure ($18.95 two-course lunch or $38.95 three-course dinner) offered October 15-31, 2017.
Why New Orleans?
It was in New Orleans where Michael's On East Founder and Co-Proprietor Michael Klauber gained his original love for food with bold flavor. Following studies at Cornell University, Klauber began a management training program at the famed Royal Sonesta Hotel New Orleans where he worked directly with hotel General Manager Archie Casbarian. In 1978, Casbarian purchased the historic Arnaud's site and began restoration of the property, inviting Klauber to join him in transition and re-opening of the restaurant. Klauber worked with the Casbarian family from 1977 to 1980.

"Having recently celebrated 30 years, it's a nostalgic time to reflect and celebrate our history, and New Orleans is certainly an influential part of my history," said Klauber. "Count Arnaud (Cazenave) believed that 'the pursuit of the pleasures of the table is as worthy as anything else one chooses to pursue in life,' and I take great pride in serving our community and our guests. What I learned from my mentor Archie Casbarian is the philosophy of running the business from the guest's point of view. A philosophy we continue to live by today at Michael's On East."
